be using yukon gold potatoes, but you could use a red potato or the yukon gold, which is the same, just a different color and they have a buttery flavor. also if you go to the farmers market you can find blue potatoes. we’re making a bleu cheese potato salad, so sometimes the blue potatoes are a nice twist as well. so we started with yukon gold potatoes and i just coked them and i’m going to dice them into bite sized pieces, right about like that. i have about two pounds here. and when you’re cooking the potatoes, make sure they’re cooked all the way through, but not mushy, like when you would be making mashed potato, you don’t want them quite that soft, but cooked all the way through, so maybe take a potato and test it. then i’m going to ad some red onion. and i’m going to dice about probably like a half of this. and we want just finely chopped. i’m going to ad that into the pot, or the
