(rocky dunnam:) ingredients: 1 pkg sausage; fully cooked, diced 1.5 cup hashbrown potatoes; frozen 1 ea shallot; chopped 1 cup cheddar cheese; shredded 2 ea whole eggs 1 cup whole milk cup biscuit mix season kosher salt/black pepper procedure: 1. combine sausage, hash browns, onion, and cheese. (reserve some cheese for finish) 2. spoon into greased muffin tin. 3. whisk together eggs, milk, biscuit mix, salt, and pepper. 4. pour over mixture in muffin tins. 5. bake for 15-20 minutes (or until set). 6. top with remaining cheese. 7. bake an additional 2-3 minutes to melt. 8. serve warm, or let chill and store in plastic bags in refrigerator for quick breakfasts!
