>> chef will mans john in. good morning. >> i’m doing great. >> very good. very good. i’ve got fresh swoferred fish here. it’s beautiful. customers really are enjoying it and we’re doing a sauteed vegetable medley with red curry sauce. rst thing i want to do is get the vegetables going. it’s a quick stir fry. we get those cocking. we pick the swordfish. salt, pepper, garlic and all purpose flower. we shake the excess off. >> just a little bit. make sure it’s good and coated. when you lay the fish in the pain you lay it so the plashes away — splashes away from you. it will brown very nicely. we toss our vegetables, add the red curry sauce and red occuris sauce is comprised of red occuris paste, coconut milk, pineapple joyce. >> okay. >> and toss it all together and get it cooked up and we add a little bit of garlic butter to it, to the vegetables to give it extra flavor. swordfish out of
