beach house, one of my favorites. it’s fan fask. >> thank you. >> yellow fin tuna. a bed of sesame seeds white and black and we make kind of of a yin and yang pattern with it. patting one side of the fish in the seeds. makes a color contrast there. >> cool. >> a little bit of olive oil in the pan. heats up very fast. swish the pan around and we sear our fish. while the fish is searing and what you want to do is toast the sesame seeds and get them a little bit brown. while we’re doing that we’ve got a heavy cream and i’ve reduced it by half. we add a little bit of sour cream for a consistency and flavor. okay. >> and then we add wasabi. now the wasabi tippicly is a very candment but when you add it to the cream and heat it like this it adds a nice flavor to it. we whisk in everything and it kind of turns color of sauce char tiews. as you reduce the cream it makes a nice sauce consistence
