beachhouse restaurant is in our kitchen this morning, and we’re making salmon. good morning. >> yes. that’s correct. what i have here is a grill pan, a stove top grill pan. i’m going to season it a little bit with a little bit of oil. keep the salmon from sticking. we’re going to place some salmon on here and it’s going to take a little bit to grill. but while we’re doing that, we’re going to put a little butter in a saute pan and a little fresh spinach in here and get this just warmed up. we don’t want to cook it too much. this salmon — i mean, this spinach was blanched in boiling water and just wilted and then shocked in ice water to keep the color nice and beautiful. >> so put it in boiling water, took it out and dropped it in ice cold water. >> that’s correct. what that does is that takes the bitterness out of the spinach. >> really! >> it really does. now, baby spinach not so much
