Chef Thomas Duffy from the Spiced Pear is with us today and he will be showing us how to cook Short Ribs and Sweet Potato Pancakes as one of the courses from their Thanksgiving menu.
we’re not thinking thanksgiving just yet. what’s going on, patrick? >> we have chef thomas duffy from the spiced pear at the can letter and we have a ribs — chanler and we have a short ribs recipe that — with all sorts of fancy side ingredients and so forth and so on. what goes into this? >> this is our short rib recipe for thanksgiving, these are boned out short ribs that we take, we braise that for two or t three hours and our side dishes are our sweet potato pancake, yukon golds potatoes and russet potatoes. >> you’re open on thanksgiving? >> we’re open 365 days a year. >> people go to your place, becauscee they don’t want to be at home. how do you prepare, is this a pan seared type? >> we sear these off and braise them in beef stock for two and a half hours. >> ok. all right.ig looking forward to giving this a try as always. welw love what the spiced pear brings to “the rhode show”
