In our first main dish of the week, Chef Eric Gruber from Shore Lodge showed us a unique combination of pumpkin and chicken.nnMOLASSES-PUMPKIN GLAZEn2 cups molassesn1 cup of pumpkin pie filling (store-bought or homemade)n1 cup Dijon mustardn1/2 cup balsamic vinegarn2 tsp Chile powdern1 TBSP minced garlicn1/4 cup apple cider vinegarn1 tsp kosher saltn1 tsp black peppernnMix all ingredients well in a bowl.nnBRINEn4 cups watern1/2 cup saltn1/4 cup maple syrupn1/4 cup honeyn2 cups icennBring all ingredients except ice to a boil. Remove from heat and add ice.nnPlace chicken wings in cool brine liquid for 12 hours. Remove from brine and place in boiling water for approximately 10 minutes or until wings are cooked through. Place cooked wings on grill and brush generously with molasses-mustard glaze. Grill wings until lightly caramelized, approximately 5 minutes. Serve with molasses glaze on the side for dipping.
