Peppercorn Seared Salmon BLT With Roasted Garlic Mayo

This week on the Morning Blend, Thunder Bay Chef Mike Stigler will be making one of his best selling lunch sandwiches…nnPeppercorn Seared Salmon BLT with Roasted Garlic MayonnThis Atlantic Salmon is seared on a hot grill with cracked black peppercorns, served up with Applewood Smoked Bacon, tomato slices, and shredded lettuce, on thick cut multi-grain bread with Roasted Garlic Mayo.nnHe will fry up the bacon, cook the salmon and assemble the sandwich live in the studio! He will top it off with a Roasted Garlic Mayo! Here’s how to roast the garlic, as well as how to make the mayo.nnOven Roasted Garlic:nnToss 1 cup of cleaned garlic cloves with 1/2 cup of olive oil. Place in a small pan, wrap with aluminum foil and roast on middle rack of oven at 325 for 45 min or until garlic is soft. Allow to cool slightly, drain oil from cloves and save for another use.
