They are new and they might just be on the next restaurant menu you read. The checkoff-funded Beef Innvoations Group recently launched five new beef cuts- two steaks, two roasts and of course boneless ribs into food service. All of the five cuts are being developed from the chuck roll. Nancy Jo Bateman with the North Dakota Beef Commission says several grocery stores are carrying the new cuts for a market test. She says they hope to have the new cuts in grocery stores on a regular basis within a few years. A new muscle that was discovered that was more tender and something that just used to be chopped into a chuck roast and slow roasted could now be used on the grill without having to be marinated without any further processing or tenderizing done because it was a tender muscle but it was just hidden in amongest alot of others. Researchers are hoping the new line of beef cuts will help increase beef demand by another ten percent by 2010.
