Learn To Make Seed Cheese

It has all the essential elements of a recipe many would fall in love with – it’s healthy, easy to make and it tastes great! Certified Raw Food Chefs Margaux and Ellie Drake walk us through the creation of Seed Cheese and it’s flavor variations. Here’s the recipe:nnSeed Cheese Trio By Ellie & Margaux DrakenMakes about 3 cupsnSeed cheese is a great tasting plant based alternative to any type of dairy cheese or traditional hummus. The basic recipe is very simple and the base ingredients can be flavored with different herbs and spices to create a trio of beautiful dips with little effort. Serve with cut vegetables, lettuce leaves, bread, crackers or chips.nnIngredients:n3 C Raw nuts/seedsn1/2 C Lemon juicen1/2 T Sea saltn2-4 Garlic clovesn1 C Purified watern1/8 C Sprouts (optional)n2 T Ginger, mincedn1 T Rosemary, driedn8-10 Sun-dried tomatoes, rehydrated in waternn• Place nuts/seeds in a bowl and cover with purified water and let soak for 4-6 hours.n• Drain and discard water. Do not use soaking water!n• Place sprouted nuts/seeds in a food processor with lemon juice, sea salt, garlic, and sprouts.n• While processing, add purified water to the blade slowly and stop adding at desired consistency.n• Divide mixture into three equal parts.n• Plate 1/3 of the basic recipe and garnish.n• Set aside 1/3 mixture.n• Leave 1/3 mixture in food processor and add ginger and rosemary to recipe, then process.n• Plate ginger and rosemary seed cheese and garnish.n• Repeat above directions with final 1/3 mixture using the rehydrated sun-dried tomatoes.n• Plate sun-dried tomato seed cheese and garnish.n• Chill if not using immediately.n• Enjoy!
