>>> and we are, of course, in the kitchen by design kitchen center. joining me now we have a couple of nice gentlemen besides tracy. >> and tracy. >> he only counts as one. sometimes it’s like two. >> what time is it? 9:10. >> joining me we have chef brad gates. how are you doing? >> good. >> and gordon jones from hick t — hickoryworks. >> we have had other chefs already utilize the shagbark hickory syrup. >> i think it was with a salmon recipe. >> and this is really unique. tell us about it. >> well, about 20 years ago we were raising shiitake mushrooms down in brown county. i got in a car wreck and we had trouble with the logs and i stumbled on a recipe from this guy whose grandmother made syrup from the bark. so i played around with this for about a year and a half and it tasted like the dickens. so what happened, this guy came over, wanted to buy some firewood. the tops of the trees
