in february, we’re going to keep you posted when and where you can see it. >> we are working with discover newport. chef ryan joins us to make a haddock dish. let’s go through the ingredients. >> the main is the yellow tomato. it’s the season for tomatoes, they’re perfectly ripe right now, nice and sweet. we’re going to do tomato relish, shallots, vinegar, put it over roasted garlic spinach. >> what seasoning do we need? >> not a lot for the fish, salt and pepper, crushed red pepper, a little oregano, make sure you get the flavor of the tomatoes. >> have you done something to the garlic? >> that’s roasted. we make our own roasted garlic oil. >> what’s the difference between a yellow day mate and red tomato. >> the red tomatoes are more acidic, so you don’t get the sweetness. these are much more mild, much sweeter. >> excellent, light for the summertime. you were mentioning, too, that spe
