time to get cook, and we are at the chef’s academy. and if you’re looking for something light and refreshing to eat this summer, executive chef scott ricinberger has the recipe for us. >> yes, i do. i’m going to do a taz m tasmanian sal whatted — salad. it’s not going to taste bad. i will take a piece of salmon i cut and just wrap it around the scallop, then i have a toothpick here i’m going to use, just to stick in there like so, just so it doesn’t fall off, just like so. take a little bit of oil. saute pan. going to heat that up. and as that does — we’re going to make a citrus vinaigrette today. what i’m going to do is tack a little orange zest, lemon zest, lime zest and some of their juice, and shallots, a tablespoon or so. the juice and the vinaigrette, we’ll take this, stir it lightly, and then add a little bit — i’m using the grapeseed oil, just a nice oil. it’s good for you, to
