one of our better soy menus. we’ll be doing a pasta. a shrimp and scallop cajun will he genie. — liguini. i like to use a mixture of olive and vegetable oil. in the meantime, we’re going to take another pan. some of our garlic. our onions. salt anpepper. >> oh. once your butter starts to get a nice carmelization, it almost starts to brown, if you will. you’re going to take your scallops, side down, and let it cook until it develops a nice carmelization. going into this dish with our shrimp, we have some diced roasted red pepper, some roma tomato. you can use any tomato for this. i prefer roma, because the water content isn’t as high in a roma. once the shrimp have started to cook on all the sides, we’ll add a little bit of white wine. and just let that boil up until the alcohol’s burned off. it shouldn’t take more than a minute or two. and then going back to our scallops, you notice it’
