>> what are you going to prepare for us today? >> we’re going to do a slow-roasted braiseed lamb shank. >> okay, how do we prepare them? >> we’re going to dip them in olive oil, salt and pepper them. a little salt on all sides. tap this, too. we’ll go right over here to the saute pan with a little olive oil. not too high heat. you don’t want to burn the flour. you just want to get it nice and seared on all sides. and while that’s searing, we’re going to go back to our vegetables. >> all right. > you want to do some caramelized mere flour, carrots, celery, onions, and i threw a little garlic clove in there. and then once you have everything nice and caramelized, you’re going to take your vegetables into a nice roasting pan. you’re going to start first, put your vegetables right in the bottom. you’re also going to take sprig of thyme, a couple spriggs of thyme, and some rosemary, kind of b
