Get Cooking: Banana Chocolate Spring Roll with Peanut Butter Ganache
it’s time to get cooking. we are at the chef’s academy. joining me today is executive chef scott taupe with butler university. welcome. >> thank you. thank you. it’s good to be here. >> so you’re going to be preparing a dish for us that actually the college kids get to eat. >> they do. >> this is pretty good stuff. >> we do. we have a dish we do from time to time. and some of our ding halls. it’s very popular on our catering menu. it’s a banana/chocolate spring ball with a dipping sauce. >> okay. >> what we’re going to do is we’re going to take — we’re going to take a bana real quick. it doesn’t need to be very pretty, because it will go in e spring roll. we’ll dice it up, little tiny piece, as best we can. the riper the bana, better. if you have a little bit of bruising on it, that’s fine. it will make that banana that much sweeter. we have plain nestle tollhouse chocolate chips here.
