you can do it at home, too. >> welcome to seattle, washington. we’re going to show you one of our signature items, the blancked salmon. when you’re doing a planned fish, you mean to — planked fish, you want to use wood not cured or treated. alder, maple, cherry, many different kinds of wood. cedar is very good, very popular. what you want to do is you want to focus for about 10 or 15 minutes before you put the fish on it. that way it burn up in the oven and get your house smoky. the first thing we’re going to do is make a rub for it, we have a special rub here at ely’s easter house, consists of brown sugar, kayian pepper, white pepper, black pepper, next we’re going to add chili powder, some thyme, and some paprika. i like to use smoked hungarian paprika, but any kind is great for this. give it a good stir. you can add onion powder and garlic powder to this as well. any kind of dry seas
