We’re making Pan Seared Prime New York Sirloin, Baby Arugula Salad with Blue Cheese, Smoked Bacon and Dijon Truffle Vinaigrette with Chef David Jackson of Ten Prime Steak & Sushi.
>> thank you so much for coming in. >> thank you very much. >> today in the kitchen, we will be making pan-zeroed prime new york sirloin. i love steak. what kind of items do we need to have in our kitchen? >> right here, we have the prime sirloin. this is 2% of beef, it’s marbled and prime. you can see all the fat in here marbling. it’s very nice. we’re going to pair it with a salad. we’re going to make a vinaigrette with dijon, a little white truffle oil, vegetable oil, lemon juice, we’re going to mix salad and put it around the salad. >> i don’t know what truffle oil is, but i like chocolate truffles and i don’t think it’s made from that. >> it has much more mushroom flavor. we’re going to put just a little hint. it is very strong, so oh just a nice balance with it. >> when you shop for steak, what kind of a cut, i don’t know what part of the animal is on that i’m a ginger in the kitch
