>>> chef judi is in the kitchen and we are celebrating our countdown to oscar. >> i’m partial to midnight in paris and the artists. i’m hoping that one of them wins. >> it’s one of the best that we have seen. >> i’m hoping so in that honor i thought i would make us french onion soup. this is easy to do. we will start with six large sweet onions. i tend to us vidalia onions, because they are sweeter. we will keep browning these, so i would say a good 20 to 30 minutes. we don’t want them completely caramelized but we want some brown on them. we want to add a touch of brown butter. the european butter is higher butter fat content, so it makes things creamier and purer. you will notice it’s a lighter color usually so that makes a difference, too. a fair amount of ground pepper, and just a hint of salt, because we are going to add a salt balm, and the salt balm comes in this demiglaze bowl. y
