phlegm being restaurant cooking up, this is an ahi tuna dish that is popping up in your new menu. >> a new menu starting in october. that is our small plates. this is a twist on our regular menu item which we have tuna. this is our sushi grade tuna. we cut that down the center and flip it over and slice it up. >> tell us as you cut it up, what the new menu items are all about? >> it’s actually just making small plates in between the size of an appetizer and an entree. it’s bringing new clea clientele to the restaurant. >> are they the size of a tas. >> we are dredging right now, is pepper corn poppy seeds. say that a few times. >> we are going to spray it with the pan spray. keep it nice and light. nice for summer. we will get it on the nice hot pan. want to do the rest of those? >> sure. >> then we will start the vinaigrette. it’s ale little bit of a tomato salad instead of a vinaigrett
