>>> chef judi gallagher’s making salmon over here a work of art. >> well, i hope so, linda. let’s get started. first thing you do, whenever you’re cooking a fish like salmon, it tends to be a slightly oily on its own, but to enhance the moisture, i’m going to add a little bit of olive oil right on top. >> on top of it? not in the pan, but on it? >> exactly. we’ll have a little b in the pan, just to keep it from sticking. >> some in the pan, but not much. put it on the fish. >> and let it sit for about five minutes with sea salt and just like that, and it’s just going to sear in the moisture. you know, you’ve seen me before, one of my cooking tips is to use mayonnaise because that cholesterol, the same thing, the oil in the egg really hds in that beautiful moisture of the fish. so we’re going to sear it in the hot pan, depending on the thickness, it’s usually about three minutes per side.
