fleming’s is going to show us how to make something really special. so what is the white stuff over there? >> the white tough stuff is our tempura mix. >> it’s already mixed up? >> it is. it’s just basic — they sell it as tempura batter. you mix it with a little bit of club soda so it gives the fizz, and i’m not exactly sure how the chemicals break down, but you want to make sure the consistency is nice and thin. you don’t want anything thick like pancake batter. you want it to be thin and loose so that it just kinda gives you that lacey kind of effect. >> doing a huge mushroom here. > i’m just going to slice this portabello. i’ve done a few ahead of time. so now what we have to do is prepare everything for the frying. >> we’ve got our frying pan going. how hot is it? >> 3 i-75. >> 375. >> which is perfect. of course you want to be really careful, you know, you don’t want to be rainfall
