i’m chef judi gallagher, and today i kinda had the day off. i have chef erin from manatee technical institute, and she’s going to teach us what dish today? >> we’re making chicken empanadas today. >> fantastic. let’s jump right in and start cooking, erin. >> okay. first i want to make sure our pan is nice and hot, and then i’m going to add a little bit of vegetable oil, just enough to coat the bottom of the pan. >> how long do you think you need to heat the oil before you can start sauteing or sweating the vegetables? >> you can start right away. >> okay. great. >> yeah. >> so we’re going to put in our onions. >> and i have to tell you, for a chef student, this is pretty impressive, because these cuts 0 really beautiful. >> thank you. >> you don’t progress unless you get measured in all your cuts, and these are really nice. >> exactly. so we put in our green peppers, onion and garlic. >>
