judi’s dish, and i’m guessing this has something to do with valentine’s day. >> well, i think it does. i think this is sassy and saucy and has a little bit of chocolate to bring it home tonight. >> all right. >> are you ready? >> yeah. >> okay. got these gorgeous hand-cut filet mignons from fresh market. what i did, tablespoon of butter, equal amount of canola or vegetable oil in the pan. salt and pepper. let the meat sit out on the counter for 20 minutes. you’ve got to get it close to room temperature. >> after cooking? >> before you cook. before. get it a little more room temperature. it’s going to cook more evenly. so going to take about 15 minutes per side and you’re going to get that gorgeous crust. it’s half from the butter and the oil and half from just letting it sear. >> do you like pan searing as opposed to broiling? >> i like to grill outside more than anything, but something
