>> as we mentioned a moment ago, chef justin fields in from roy’s hawaiian fusion. a great restaurant. >> thank you very much. >> we love roy’s style of cooking. you always add a little something of your own flavor into it. >> what we’ve got going right here, this is a corn puree’. this is going to be the sauce for our lobster tail. very easy to make. a little bit of sweet corn we puree’ with a little bit of water. we put that into a pan. >> don’t ad anything? >> no strain. just straight up. i add a little pat of butter. i’m going to transfer this over to the side, put my lobster tails in this saffron butter. we have a little bit of clarified burt that is flavored with saffron. very expensive ingredient, saffron is, because it takes about every flower only produces maybe not even a quarter ounce. >> like the orchid. >> absolutely. >> maybe that’s why it’s got yellow in there. >> that lit
