gecko grocer and deli in downtown amy. we’re going to make for you our smoked bleu eese and roasted red bell pepper potato salad. this particular potato salad features smoked roquefort from monroe. it’s a raw cased cheese. and we’re going to start off with our potatoes. we always use skin-on, organic potatoes, and we boil them the night before. these have been cut into eight pieces. we use organic potatoes because we want to have the skin ballparks we know that most of the newton’s from potatoes are actually in the skin. and for potatoes that aren’t organic, that’s where pesticides can reside. so we’re going to start with our potatoes and build our dressing right in the bowl today. we’re going to start with some real mayonnaise. we’re going to add our garnishments. we have some red onions. some celery. our roasted red bell peppers. and then we’re going to add a little bit of flavoring. w
