think retro 40′s attitude with northern new mexico flavor. combine the two and you’ve got one of albuquerque’s newest restaurants– tia betty blue’s. antoinette antonio checked it out for us. nats “its northern new mexico inspired home cooking but done with a lot of innovation.” that’s the idea behind tia betty blue’s. she doesn’t actually exist… but her spirit is alive in the menu and the staff. “our vibe here is kind of feminine hispanic I think and blue is actually from the blue corn. we do a lot of stuff with blue corn.” “whats interesting is our blue corn waffle boats. these are waffles that are in the shape of a boat. you can get them either sweet with seasonal berries and whip creams that we flavor ourselves in house or you can do a more savory version. we do scrambled eggs and our own red chile or green chile.” OR HOW about a new mexico po’ boy? a twist on the new orleans class
