>>> anytime you go to fleming’s you have to order a fillet or steak. and before that you get the side dishes. >> what we’re going to do is the baby carrot dish and what we’re going to start is the apple cider vinaigrette. it’s a reduction of apple cider, apple juice, water and golden ra isins. if you want to use regular raisins, you can do that. >> so golden raisins, not a difference. >> a little bit sweeter and tarter. >>> once it comes up to a boil, we’re going to strain it and then reserve some of our liquid and use the grapes, sorry, the raisins. what we started off with a saute pan with butter in there.to melt down the butter and start to carl mel caramelize. >> it smells fabulous. >> we do the baby carrots and we will deglaze it with a little bit of reduction. you want to do that away from yourself, because you don’t want to your full mouth of vinegar to start coughing. we will pop
