I suppose there really isn't anything particularly Greek about this chicken salad, but that's what I call it.  Maybe it's just so everyone knows what I mean when I ask if they want Green Chicken Salad as opposed to say Curried Chicken Salad, Thai Chicken Salad or just general Chicken Salad.  Or maybe because when it's still in the bowl, it vaguely reminds me of the filling for Spinach Bouregs (Spanakopita).  You can call it Spinach Chicken Salad or whatever you want, but it's definitely a nice change of pace and a way to get picky kids to eat spinach.INGREDIENTS:Cooked chickenSpinach (frozen chopped spinach,...

Peanut Butter and Apple Cake - an Epic Fail with a Silver Lining and a Lesson

A couple of weeks ago, I found myself eating a lot of fruit with yogurt. When I got to where I couldn't fathom another bowlful but still had yogurt in the fridge and a few apples sitting around, I felt compelled to throw something together and settled on a Peanut Butter and Apple Cake, thinking of apple slices with peanut butter.  It came together in a jiffy (no PB pun intended), and smelled great while baking.  It toothpick tested...

Fiery Pickled Cucumbers and Jalapenos ... Pickles that Bite Back!

If you like the thought of a spicy pickle but don't have a high threshold for heat, be sure to either knock most of the seeds out of the jalapenos, or trim off the ends and swish them in water to rinse out the seeds.  These turned out even hotter than I was expecting ... not that it stopped me from eating them.  My nose did run though, so proceed with caution.I decided to play around with the vinegars in these pickles and use a...

Kale Soup with Hot Italian Sausage

I went to the grocery store the other day and picked up some chicken, beef, and hot Italian sausages, not sure what I was going to do with any of them.  I already had kale in the fridge and was contemplating making soup, so I figured I'd use one of them, probably the beef.  While I was unpacking the groceries, I changed my mind and opted to use the sausage - good choice! I had a bowl for dinner last night and had to go back for...

Grammys String Beans & Eggs ... almost

I never really gave it much thought until making this, but of all the omelettes and quiches I've eaten and seen in restaurants over the years, I don't recall any having string beans in them.  Even having grown up eating this, it never occurred to me to use them myself.  String Beans and Eggs is a very common dish in an Armenian household.  Often served as a side dish, it also makes a super simple quick dinner option, which is how...

Pretty in Pink Quinoa Salad

When life hands you lemons beets, re-name your recipe.  I had originally planned to refer to this as a Quinoa Salad with Lime Vinaigrette, but since the beets turned the quinoa pink, I changed my mind.  That iiiiiiisss a woman's prerogative you know!  JI'll keep it short today - I usually blab on and on.  Suffice it to say, the combination of ingredients is "just right."  No one flavor/ingredient overpowers the rest....

Source: IMBd"My favorite movie of all time is ... "This may not be my "favorite movie of all time," that's a tough call, but whenever someone asks me that question, this is the movie that immediately comes to mind.  Aside from having a great cast: Kevin Spacey, Gabriel Byrne, Benicio Del Toro, Kevin Pollak, Chazz Palminteri, Pete Postlethwaite, Stephen Baldwin, Dan Hedaya, and Giancarlo Esposito, it was a great script.  Best of all, it...

Noodlemania! 50 Playful Pasta Recipes - by Melissa Barlow

This is the downside of doing cookbook reviews - I received this book from the publisher and sadly, being honest, there is more I dislike than like about it.  I understand that a lot of work goes into these things, but as cute and clever as it may be, I'm just not a fan.  Let's start with the positive ...Aside from the recipes and photos, many of which sport additional illustration, as evidenced by the cover shot above, there are also...

Stuffed Turkey Meatloaf

I have had turkey on the brain lately - more specifically ground turkey, given the recent recall.  In thinking about those awesome leftover turkey sandwiches, you know the ones - where you pile on the turkey, cranberry sauce, stuffing, maybe a little gravy, etc., I at some point contemplated turning that into a meatloaf but never got around to it.  I noticed that ground turkey is back on the shelves now, so there's no time like the...

Finish the Sentence Friday: I Blog Because ...

This week's Finish the Sentence Friday starter is "I blog because ..."A few years back, I was searching online for a recipe and stumbled upon a foodie site I was not familiar with.  I wandered around for a while looking at recipes, then realized that there was a chat forum, so I checked that out as well.  Something in that day's thread must have caught my attention, because I wouldn't normally have jumped in, but I did ... and ended up...

Cooking with Flowers by Miche Bacher of Mali B Sweets

Once again, the folks at Quirk Books have introduced me to something new and interesting.  This time around, I was given an opportunity to review Cooking with Flowers: Sweet and Savory Recipes with Rose Petals, Lilacs, Lavender, and Other Edible Flowers, by Miche Bacher of Mali B Sweets, photography by Miana Jun.  I have been holding back on reviewing this particular cookbook for a while now because I really wanted to be able to try...
