1 bag (3 lbs.) McIntosh, Granny Smith, Gala or other cooking apple
1 bag (12 oz.) frozen raspberries
2 cups apple juice
Cut apples into eighths using a push-down apple cutter. Place apples, including cores, into a large pot. Add remaining ingredients, stirring gently to combine.
Cover and cook over medium heat until apples are tender, about 20 to 25 minutes. Remove from heat and allow to cool for at least 20 minutes.
Assemble and attach Fruit & Vegetable Strainer to stand mixer. Position bowls to catch fruit puree and run-off. Turn to Speed 4 and process apple mixture through attachment.
